Special Diets

We at Liberty Dining are able and capable to take care of numerous special dietary needs. To help these students, we offer gluten free bread, buns, rolls, pizza dough, cereal, and pasta.  Also we have sugar free cookies, cereal and have soy milk and vegetarian meals as well.

Most importantly, we have hired a Registered Dietitian to work alongside the culinary team to ensure compliance with healthy food standards, make dietary restriction accommodations, and to help facilitate general nutritional education with the students.  To contact Robin Quay, e-mail her at rquay@liberty.com, or Like the Liberty Dining Dietitian Facebook page.

HOT OFF THE PRESS FROM THE DIETITIAN'S DESK:

Dietitian's Dining Picks

A Word from the Dietitian

I’m Robin Quay, MS, RD, and I’m the Registered Dietitian at Liberty University. I just relocated to VA from CT, where I was the RD at a large public school district. Other work experience includes providing nutrition education & counseling at the WIC program, and in private practice.

I studied in California, where I received my BS at Cal Poly, San Luis Obispo, and completed my Master’s degree and dietetic internship at San Jose State University.

I’ve been married for 29 years, and I have a daughter, a son, a son-in-law and a daughter-in-law to-be. I also have 2 Labrador retrievers, who enjoy living on Smith Mountain Lake, where they can swim every day.

I love the idea that making healthy choices helps people to feel well, look their best, and have the energy to do their best in the activities they choose to participate in each day, like sports, work, and school. I’m excited about helping to make healthy choices easy for Liberty students, whether it’s negotiating the dining hall, selecting foods to keep on hand in a dorm room, choosing a late night snack, or figuring out how to incorporate physical activity into a hectic student schedule.
